Step 1
Pop all your onion ingredients into an oven proof dish and mix well. Pop tin foil over the top to stop it burning and bake for 1 hour on 180 degrees fan.
Step 2
Cook your pasta of choice.
Step 3
Squeeze your garlic out, then add the lemon juice, chopped up spinach, parsley, coconut milk and mix well
Step 4
Then add your cooked pasta to the mix.
Step 5
Mix well and serve, sprinkle with parmesan (optional)
