Instructions
Step 1
Cook your rice of choice. Then leave to cool. Run over cold water to assist.
Step 2
Make your Tzatziki - grate your cucumber, and squeeze the juice out. Grate your garlic. Chop your mint and dill. Mix with your greek yoghurt, add lemon, olive oil, salt and pepper to taste.
Step 3
Grate your halloumi, and fry until crispy and golden.
Step 4
Mix the Tzatziki with your cooled rice.
Step 5
Serve up and sprinkle with your crispy halloumi and pomegranate seeds
