Instructions
Step 1
Cook the pasta according to the package instructions until al dente.
Step 2
Drain the pasta and set aside, reserving a cup of pasta water.
Step 3
In a blender or food processor, add the cottage cheese, parmesan cheese, and pesto. Start with 3 tbsp of pesto and add more according to your preferences.
Step 4
Puree the cottage cheese until smooth.
Step 5
Pour the sauce over the cooked pasta.
Step 6
Toss the pasta in the sauce until well coated. If the sauce is too thick, gradually add the reserved pasta water until you reach your desired consistency.
Step 7
Season with salt and pepper to taste.
