This walnut pesto pasta is the perfect recipe if you only have 5 mins to make dinner and the result is MAMMA MIA! 🤤 For a vegan alternative, simply replace milk with soya milk and Parmigiano with the same amount of nutritional yeast 🌱

Instructions

Step 1
Remove the soft part of the bread then cut it into small pieces.
Step 2
In a pot over medium low heat, add milk and simmer for a couple of mins or until it starts warming up.
Step 3
Add bread and simmer for a couple more mins or until it softens.
Step 4
Drain your bread with a strainer and set aside.
Step 5
In a blender add walnuts, your softened bread, garlic, Parmigiano, a pinch of salt, pepper and a drizzle of extra virgin olive oil.
Step 6
Mix until you form a paste.
Step 7
In the meantime, boil your pasta in some salted water until al dente. For this preparation, I used “trofie” pasta shape.
Step 8
Add your cooked pasta to a pan over medium low heat along with your walnut pesto and some pasta water.
Step 9
Toss well over the heat to combine all the flavours together and serve with some grated Parmigiano on top. Buon appetito!
