Stuffed Peppers with Lean Turkey Mince

Ingredients
2 servings

2Red Peppers
halved & seeds removed

250gTurkey Mince

1 TbspOlive Oil

75gChestnut Mushrooms

1Courgette

0.5Red Onion

1Garlic Clove

400gTomatoes

1 TbspTomato Purée

1 tspSalt

1 tspPepper

60gGrated Mozzarella

1 ½ Tbspolive oil
plus an extra drizzle

240glean turkey breast mince
under 8% fat

0.5onion
small, chopped

1garlic clove
grated

1 tspground cumin

3mushrooms
sliced

400gcan chopped tomatoes

1 Tbsptomato purée

1chicken stock cube

fresh oregano leaves

60gmozzarella
grated

150ggreen vegetables
spinach, kale, broccoli, mangetout or green beans, to serve

Instructions
Step 1
1. Heat the oven to 190C/170F Fan/gas Mark 5.
Step 2
2. Halve and deseed the red peppers and bake for 10-15 minutes until beginning to soften.
Step 3
3. Heat the oil in a frying pan and cook the turkey mince, along with the onion and garlic, for 5 minutes until beginning to brown.

4. Add the mushrooms and courgette and cook for another 5-10 minutes.

5. Next stir in the chopped tomatoes and tomato purée then season with the salt, pepper and oregano.
Step 6
6. When the peppers come out of the oven, stuff with the turkey mince and sprinkle the mozzarella over the top.
Step 7
7. Bake for another 15 minutes until the cheese has melted and turned golden.
Step 8
8. Serve hot with a side salad.
