Step 1
Preheat oven to 200c* Cube the sweet potato and slice the fennel. Mix with a little oil in a bowl and season with salt, pepper and thyme.

Step 2
Place the sweet potato cubes and fennel into a foil parcel and place in a preheated oven to cook. When the sweet potato is almost cooked through and the white fish to the parcel and place back in the oven.
