These delightful Passion Fruit Curd and Strawberry Puffs feature crisp puff pastry squares filled with tangy passion fruit curd and juicy strawberries. The puff pastry is folded to create a beautiful seal around the strawberries and baked until golden. 1puff pastry sheet
12 tsppassion fruit curd
400gstrawberries

egg wash
1 egg yolk mixed with 1 tbsp milk

Step 1
1. Preheat the oven to 200°C (fan).
Step 2
2. Unfold the puff pastry and cut it into 12 equal squares (approximately 8cm x 8cm).
Step 3
3. Using a knife, score a 1 cm border inside each square, leaving a 1 cm gap between the outer edge and the inner square. Cut just the corners without connecting the lines in the middle.

4. Place 1 tsp of passion fruit curd in the center of each square, then place a small strawberry within the uncut border.

5. Fold the outer corners of the square so they meet in the center.

6. Place another strawberry on top, and press gently to ‘seal’ it

7. Transfer the puffs to a baking tray lined with parchment paper and brush them with egg wash.

8. Bake for 13-15 minutes, or until golden and puffed.
Step 9
9. Allow to cool, then dust with icing sugar and garnish with mint leaves if desired.
