Instructions

Step 1
In a large pan, heat the olive oil over medium heat.

Add the diced onion, leek, and red bell pepper to the pan. Cook until they are soft, about 5 minutes.

Stir in the minced garlic and cherry tomatoes. Cook for another 2-3 minutes until the tomatoes start to soften.

Add the cumin, ground paprika, oregano, salt, and pepper. Stir well to combine.

Pour in the pasta sauce and stir everything together. Let it simmer for about 5 minutes.

Using a spoon, make two small wells in the sauce. Crack an egg into each well. You can add the feta here, giving the meal a great flavor!

Cover the pan and cook until the eggs are done to your liking, about 5-7 minutes for runny yolks.
Step 8
Once the eggs are cooked, remove the pan from heat. Serve the shakshuka hot with some crusty bread.
