Ingredients

4chicken leg quarters
6potatoes
diced large
1 lbfresh green beans
2 cupsmushrooms sliced
1Vidalia onion
sliced
1 bottleVidalia Onion dressing
½ cupparsley
Instructions
Step 1
Cut and trim leg quarters into thighs and drumsticks
Step 2
Toss onions, potatoes, green beans, and mushrooms in 1/3 bottle of dressing.
Layer on bottom of casserole dish
Step 3
Toss chicken in 1/3 bottle of dressing. Layer on top of vegetables in casserole dish.
Step 4
Cover casserole with foil. Bake at 350° for 30 minutes
Step 5
After 30 minutes, remove foil, and drizzle remaining 1/3 bottle of dressing over chicken, and bake uncovered for 20 more minutes.
Step 6
If chicken isn't quite crispy on top, brown under broiler for 3-5 minutes
Step 7
Garnish with chopped parsley before serving
Step 8
Optional: Before serving, drain drippings into a saucepan and mix with a cornstarch slurry to thicken into gravy.
Step 9
If not using potatoes or green beans in the casserole dish, cook separately and serve on the side.
