Instructions

Step 1
Preheat grill to medium. Arrange aubergine slices on tray, brush with oil, sprinkle with salt and grill for 12 minutes, turning halfway through
Step 2
Heat remaining oil and fry onion for 10 minutes until soft. Add garlic and fry for 1 minute. Add tomatoes, oregano and sugar. Bring to the boil and simmer for 15 minutes until sauce is thick and pulpy. Stir in most of the basil
Step 3
Preheat oven to 200C fan. Spoon a thin layer of sauce in to 1.8 l serving dish,dot over 1/3 of mozzarella. Cover with a layer of aubergine then repeat the process and finish with a layer of sauce and mozzarella
Step 4
Sprinkle over the parmesan and bake for 15-20 minutes until bubbling and golden. Garnish with remaining basil and serve with crusty bread and green salad
