Cannellini Bean Salad
Cannellini Bean Salad | Throw this bean salad on a slice of toast or eat right out of the bowl. Perfect for a snack, side, or even a full meal!
Dressing:
-1/2 cup parsley
-1 TB Calabrian Chili paste
-1/2 shallot, minced
-1/4 cup EVOO
-1 lemon, juiced
-Salt & Pepper
Salad:
-2 cans cannellini bean (15.5oz each)
-1/3 cup roasted peppers, diced
-1/3 cup marinated eggplant, chopped
-1/4 cup sun dried tomatoes, chopped
Mix all the dressing ingredients in a small bowl. Taste, and adjust seasoning as needed.
Add all the salad ingredients to a large bowl, followed by the dressing. Mix until fully combined. Then taste and adjust seasoning as needed.
Let the salad sit in the fridge for 30 minutes to allow all the flavors to come together.
