Ingredients
4 servings
340gpasta
I use spaghetti
2 tablespoonsolive oil
1onion
small, finely chopped
4garlic cloves
whole
800gcherry tomatoes
San Marzano if possible
1carrot
small, to reduce acidity
10fresh basil leaves
for cooking and garnish
Salt
black pepper
freshly ground, to taste
Parmesan cheese
Freshly grated, optional, for serving
Instructions
Step 1
Bring a large pot of salted water to a boil. Add the pasta and cook according al dente. Reserve about 1/2 cup of the pasta cooking water, then drain the pasta.
Step 2
While the pasta is cooking, heat the olive oil in a large skillet over medium heat.
Step 3
Add the chopped onion and sauté for about 5-7 minutes, until the onion is soft and translucent.
Step 4
Add whole garlic cloves and cook for another minute, stirring constantly, until fragrant.
Step 5
Slice San Marziano tomatoes on half, add them. You can break up the tomatoes with a wooden spoon when they become soft. Add small whole carot that will reduce acidity (don’t like to use sugar). Carrot is removed when sauce is cooked.
Step 6
Simmer the sauce on low heat for 15-25 minutes, stirring occasionally, until it thickens slightly.
Step 7
Add the cooked pasta to the skillet with the marinara sauce. Toss to coat the pasta evenly in the sauce.
Step 8
If the sauce is too thick, add a little of the reserved pasta cooking water, a tablespoon at a time, until you reach your desired consistency.
Step 9
Divide the pasta among serving plates.
Step 10
Garnish with fresh basil leaves and, if desired, freshly grated Parmesan cheese.
Step 11
