Ingredients

Vegan Spaghetti Bolognese
200gspaghetti
use gluten-free if needed
1 Tbspolive oil
1onion
finely chopped
2garlic cloves
minced
1carrot
finely diced
1celery stalk
finely diced
1bell pepper
diced
200gmushrooms
finely chopped
1 x 400glentils
can, drained and rinsed
1 x 400gcrushed tomatoes
can
2 Tbsptomato paste
1 tspdried oregano
1 tspdried basil
½ tspsmoked paprika
optional, for extra flavor
salt
to taste
pepper
to taste
Fresh basil
or parsley, for garnish, optional
Instructions
Cook the Spaghetti:
Step 1
Bring a large pot of salted water to a boil. Add the spaghetti and cook according to the package instructions until al dente. Drain and set aside.
Prepare the Bolognese Sauce:
Step 2
While the pasta is cooking, heat the olive oil in a large pan over medium heat.
Step 3
Add the chopped onion and garlic, sautéing until they become soft and translucent, about 5 minutes.
Add the Vegetables:

Add the diced carrot, celery, and bell pepper to the pan. Cook for another 5 minutes until the vegetables begin to soften.

Stir in the chopped mushrooms and cook until they release their moisture and begin to brown, about 5 minutes.
Add Lentils and Tomatoes:

Add the drained lentils, crushed tomatoes, and tomato paste to the pan. Stir well to combine.

Sprinkle in the oregano, basil, and smoked paprika (if using). Season with salt and pepper to taste.
Simmer the Sauce:

Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally. This will allow the flavors to meld together and thicken the sauce.
Serve:

Divide the cooked spaghetti onto plates and top with the Bolognese sauce.

Garnish with fresh basil or parsley if desired.
TIPS FOR BEGINNERS:

For extra flavor, you can add a splash of balsamic vinegar or a pinch of sugar to balance the acidity of the tomatoes.
