Instructions
Cook the Pasta:
Step 1
Bring a large pot of salted water to a boil.

Add the ziti pasta and cook according to the package instructions until al dente (firm to the bite). This usually takes about 10 minutes.

Drain the pasta and set it aside.
Cook the Beyond Meat:

While the pasta is cooking, heat a large pan over medium heat.

Add the diced onion and sauté until it becomes soft and translucent, about 3-5 minutes.

Add the Beyond Meat to the pan. Cook and stir until it’s browned and cooked through, about 5-7 minutes.
Add the Sauce:

Pour the marinara sauce into the pan with the cooked Beyond Meat and onion.

Add 1/4 cup water to the empty marinara jar, shake it, and pour it into the pan to get all the sauce out.

Stir everything together and let it simmer for 5 minutes.
Combine Pasta and Sauce:

Preheat your oven to 375°F (190°C).

Mix the cooked ziti pasta with the sauce in the pan until the pasta is fully coated.
Assemble the Baked Ziti:

In a large baking dish, pour half of the pasta and sauce mixture.

Sprinkle half of the vegan mozzarella and parmesan cheese shreds over the pasta.

Add the remaining pasta mixture on top.

Finish by sprinkling the rest of the cheese on top.

Cover the baking dish with aluminum foil.
