Fried mini Aubergine and Eggs - Mini Tortang Talong
This is my new favorite way to eat aubergines . Packed full of flavor and absolutely delicious . You can bake or air fry if you prefer either way it’s so tasty for breakfast lunch or dinner .

Instructions
Step 1
Use 4 mini aubergines if you can find them or 2 large ones . Add to a steamer and steam for about 15 minutes until fork tender then slice down the middle ( leaving on the stem) and gently mash the aubergines flesh with a fork to spread it out
Step 2
Add eggs salt pepper garlic ginger toasted sesame oil Chinese five spice and red pepper flakes to a bowl and mix together

Step 3
Add some oil to a pan and get the oil hot then add in the aubergines and egg and mash the flesh of the aubergine together in the pan with the eggs . Add spring onion on top and cover with a lid and cook on medium high for about 7 minutes then serve with your favorite hot sauce
