Step 1
Slice pumpkin into small slices, and then put pumpkin slices in the steamer to cook until the pumpkin can easily be pierced with a fork. Take steamed pumpkin slices into a bowl, smash them into paste.
Step 2
Slowly blend sweet rice flour into pumpkin paste (slowly add water as needed) until flour is fully cooperated, knead it until it becomes a pumpkin dough.
Step 3
Heat up oil in the pan, divide pumpkin dough into 60 g round balls. Flat mashed pumpkin ball into a wrapper and place good amount of red bean paste (20g) in the middle of pumpkin wrapper. Wrap the dough around the red bean paste filling and pinch the edges together, forming a ball again. Gently press the ball until it is shaped like a mini pancake, 1-1.5 cm in thickness. Toss the pancake in sesame and shake off any extra.
Step 4
Place pancake in hot pan, slowly pan fry on low heat until both side becomes gold brown. Transfer to a plate to cool off. Cook the rest of pancakes in the same manner. Serve them warm.
