140greduced fat cottage cheese

120greduced fat cheddar cheese
grated by hand, avoid pre-grated

90gSoft cheese
goat cheese, blue cheese, boursin, or any other to taste

45gnutritional yeast

120mlmilk

1 tspmiso paste

¼ tspgarlic granules

¼ tsppaprika

¼ tspblack pepper

¼ tsponion granules

salt

2 Tbspwater
pasta water if possible

1 Tbspcorn starch
or instant thickening granules
Instructions
Step 1
Blend together all ingredients except corn starch and water
Step 2
Transfer to small saucepan and bring to a simmer
Step 3
Mix together water and corn starch to form a slurry (skip this step if using thickening granules)
Step 4
Once sauce has reached a simmer, add cornstarch slurry / thickening granules
Step 5
Cook until thickened
