Step 1
Heat oil in a saucepan over medium heat, add onion and bacon and cook for 4 minutes or until onion is golden and bacon crisp.

Add potato, mustard, sweet corn and stock and bring to the boil. Reduce heat and simmer for 10 minutes or until potato is soft.
