160gpenne
½ Tbspolive oil
10cherry tomatoes
halved
0.5yellow capsicum
diced
1 Tbsppeanuts
chopped, to serve
Pesto
Satay Sauce
Instructions
Step 1
Cook the pasta in pot of boiling water until al dente, reserving some of the water when draining.
Step 2
Blitz the pesto ingredients in a food processor until a paste is formed.
Step 3
In a small bowl, mix the satay sauce ingredients (except the peanuts) until combined.
Step 4
Heat oil in a frying pan, adding in tomatoes and capsicum. Cook for a few minutes until softened.
Step 5
Lower the heat, then add to the veggies the pasta and pesto. Mix thoroughly.
Step 6
Serve in bowls, pouring over the satay sauce. Top with chopped peanuts.
