1. Preheat oven to 400*

2. In a large bowl, toss together cauliflower, salt and pepper, 1TBS olive oil, and minced garlic until evenly coated.

3. Spread the cauliflower evenly on a baking sheet in a single layer and roast on the oven for 20-25 minutes is slightly browned and tender.

4. In a large skillet heat remaining oil, and add the mushrooms, sautéing until brown and tender. 5-7 minutes

5. Once the cauliflower is roasted, add it to the skillet with the mushrooms. Mix well to combine and season with red pepper flakes if desired.

6. Cook another 2-3 minutes till flavors are blended.
Step 7
7. Serve as a side or a main dish over a grain.
