Instructions

Step 1
Combine & cover with a damp towel. Let rest for 1 hour.
Step 2
Preform 4 sets of stretch & folds every 30 minutes.
Step 3
After 4th set, cover with plastic wrap and refrigerate overnight.
Step 4
In the morning, remove dough from refrigerator and allow to come to room temperature. (Approximately 2 hrs)
Step 5
Remove dough gently from the bowl, divide into two sections & shape each section into loaves.
Step 6
Place each loaf in a buttered loaf pan. Spray generously with water. Score the top and cover loosely with tinfoil.
Step 7
Bake in a 400° preheated oven for 35 minutes. Reduce oven temperature to 375° and bake uncovered for an additional 15 minutes.
Step 8
Remove loaves from the pans and place on a cooling rack for 1 hour before slicing.
