Step 1
1.Prepare the Tagine Base: In a large, heavy-bottomed pot or traditional tagine, heat the olive oil over medium heat.
Add the chopped onion and sauté for 5-7 minutes until soft and translucent.
Add the minced garlic and cook for another minute until fragrant 2.Add the Vegetables and Spices: Stir in the carrots, zucchini, red bell pepper, butternut squash, and sweet potato. Cook for 5 minutes, stirring occasionally.
Add all the spices (cumin, coriander, cinnamon, turmeric, ginger, cayenne pepper, smoked paprika) along with salt and pepper. Stir to coat the vegetables evenly with the spices. 3.Add the Sauce Ingredients: Pour in the diced tomatoes, vegetable broth, and tomato paste. Stir well to combine.
Add the chickpeas, dried apricots, raisins or sultanas (if using), and green olives (if using).
Bring the mixture to a boil, then reduce the heat to low, cover, and let it simmer for 30-40 minutes, or until the vegetables are tender and the flavors have melded together. 4.Finish and Serve: Stir in the honey or maple syrup and lemon juice, adjusting the seasoning to taste.
If the tagine is too thick, you can add a bit more broth or water to reach your desired consistency.
Garnish with fresh cilantro, parsley, and mint if desired. 5.Serving Suggestions: Serve the Veggie Tagine hot, over a bed of couscous, quinoa, or rice.
Accompany it with warm flatbread or crusty bread for a complete meal
