Instructions

adjust rack to lower-middle position and preheat oven to 350°F

For Topping:

In a stand mixer with paddle attachment, add together all ingredients and mix on low speed until sandy and well combined.

For Coffee Cake:

Step 3
In a stand mixer with paddle attachment, gather the following ingredients and mix on low to moisten. Increase speed to medium for around 10 minutes. Pause to scrape bowl then resume mixing and add in eggs one at a time, allowing each to fully incorporate before adding the next.

Step 4
Scrape bowl and beater then resume mixing on low. Add 1/3 of flour and 1/3 of greek yogurt. Repeat with remaining flour and yogurt, adding in increments of thirds. Fold batter 1-2 times before putting into a parchment lined 9-13-2 baking pan. Cover with prepared topping and put in oven.

bake for 40 minutes until cake is puffed and firm then let cool for 30 minutes and enjoy.
