Preheat oven to 350

Cut off tops of bell peppers, cut bell in 1/2 and remove ribs

Dice onion, and tops of bell peps
Step 4
Mince/press garlic
Step 5
Preheat stove top to medium high, with 15ml olive oil
Step 6
Sweat down bell pepper and onion with pinch of salt, until starting to go translucent, add garlic, cook 2-3 minutes until perfumed

remove everything from pan

Cook the turkey, add back veg
Step 9
Add italian seasoning, paprika, can of tomatoes, rice and beef stock. bring to boil, lower to simmer for ~8 minutes to reduce.
Step 10
Spray casserole with olive oil, lay peppers down and stuff with mixture. Cover with foil
Step 11
Bake for 35 minutes, remove foil. Add cheese, bake 10 minutes more
