Ingredients
4 servings
3 headsromaine lettuce
finely chopped
1 x 14.75 ozcan pink salmon
1 x 15 ozcan chickpeas
drained and rinsed
1 x 15 ozcan pinto beans
drained and rinsed
¼ cupsundried tomatoes
drained
¾ cupartichokes
chopped, marinated and drained
3 Tbspextra-virgin olive oil
2 tablespoonsaged balsamic vinegar
3 Tbspfinely grated parmesan cheese
1 teaspoondijon mustard
½ teaspoonsalt
½ teaspoonwhite pepper
Instructions
Step 1
Whisk olive oil, balsamic vinegar, mustard, parmesan, salt, and pepper in a large bowl until well blended.
Step 2
Toss lettuce, salmon, chickpeas, pinto beans, sundried tomatoes, and artichokes with vinaigrette to coat well.
