Back Burner Ratatouille

So good and so easy, this comforting provincial dish is great warm as a side dish or cold with cottage cheese for lunch. The leftovers just keep getting better!

Instructions

Step 1
Stir tomatoes, zucchini, squash, eggplant, onion, salt, Italian seasoning garlic powder, and pepper together in 5-6 qt slow cooker. Cook on HIGH 3-4 hrs or LOW 6-8 hrs, stirring twice.
Step 2
Add tomato paste and cook uncovered 30 minutes to reduce and thicken the liquid. Adjust seasonings and drizzle with olive oil just before serving.
