Instructions

Step 1
Mix all sauce ingredients (soy sauce, mirin, ketchup, honey, garlic paste, ginger paste, toasted sesame oil, white sesame seeds, chili powder, ground black pepper, lemon juice, apple juice) in a small bowl until well combined.
Step 2
Heat a frying pan on high. Once hot, add a drizzle of oil and the thinly sliced beef. Sear on both sides, but don't cook completely through.
Step 3
Add the prepared sauce to the pan and stir fry the meat for 1 minute 30 seconds, mixing continuously to prevent burning.
Step 4
Remove the pan from heat. Prepare portions of cooked Japanese short-grain rice.
Step 5
Arrange the cooked meat over the rice and pour the remaining sauce from the pan on top.
Step 6
Garnish each bowl with chopped spring onion. If desired, add an egg yolk or boiled egg on top.
