DAY 1/6 SHREDDED CHICKEN MEAL PREP: Mexican Street Corn Shredded Chicken Bowls 🌽🍚 We are making easy, minimal ingredient meals packed with protein from shredded chicken! 🍗 Shredded chicken is so simple to batch prep for the week, but then you are stuck with all of this chicken that you don’t know what to do with it. Follow along with this meal prep series to break out of the usual chicken and rice meals! Ingredients per bowl: 3oz shredded chicken 113g cottage cheese 50g corn 1 tsp Mexican street corn seasoning (I used fire and stone brand) 20g mozzarella Preheat oven to 350 degrees. Spray each Pyrex bowl with cooking spray. Add your ingredients. Stir, top with cheese (I like to mix my cheese into my shredded chicken). Bake for 15-20 minutes or until cheese is melted.
