Instructions

Step 1
Place garlic, mustard, salt and vinegar in a bowl.whisk in olive oil
Step 2
Bring 4 qts of water to a boil. Add potatoes and 1 T salt and boil for 20 minutes. Drain, refresh under cold water.
Step 3
Cut asparagus into 2 inch pieces on the diaganol. Bring another 4 Qts of water to a boil. Salt and add asparagus. Boil 4 minutes. Refresh under cold water and pat dry.
Step 4
Toss potatoes, asparagus, and scallions. Heat dressing over medium heat until hot. Pour over vegetables and toss to coat.
Step 5
Arrange lettuce on platter. Mound on veggies, sprinkle with parley or chives.
