Instructions

1. Blend cornflour to a smooth paste with a little milk.

2. Warm remaining milk and combine with cornflour paste, then return to pan.

3. Cook, stirring, until mixture comes to the boil and thickens. Reduce heat to low and simmer for 3 minutes.

4. Remove from heat and stir in remaining ingredients.

5. Pour into a 568ml (1 pint) mould, first rinsed with cold water, then cool.

6. Refrigerate until cold and firm. Turn out on to a plate

Chocolate Blancmange

Follow recipe and method for blancmange (above) but add 50g (2oz) melted chocolate to cooked mixture.

Honey Blancmange

Follow recipe and method for blancmange (above) but use 30ml (2 tbsp) honey in place of sugar.

Coffee Blancmange

Follow recipe and method for blancmange (above) but add 10ml (2 tsp) instant coffee granules to milk while it is warming.
