Instructions
Step 1
Chicken Thighs: Trim excess fat from Costco chicken thighs and cut them into bite-sized pieces. Use a food processor to chop, but leave some texture for better taste.
Step 2
Seasoning: Mix the minced chicken with 3 pinches of salt, pepper, 2 tbsp cooking wine, and 1 tbsp minced garlic. Marinate for 10 minutes.
Step 3
Green Onion Garnish: Slice the white part of 3 green onions into thin strips. Finely chop a red chili pepper, if using.
Step 4
Batter: Add the chopped green onions and red chili to the chicken. Mix in 4 tbsp potato starch, and optionally, 3 tbsp breadcrumbs for crispiness. Add 1 tsp chicken powder and 3-4 tbsp water. Mix thoroughly.
Step 5
Dipping Sauce: Combine 2 tbsp soy sauce, 1 tbsp sugar, 1 tsp minced garlic, and 2 tbsp lemon juice or vinegar.
Step 6
Pan-Frying: Preheat a pan with oil. Place spoonfuls of the batter and flatten them. Cook on medium-low until both sides are golden brown.
Step 7
Finish: Garnish with drained green onion strips for a nice presentation. Enjoy your savory chicken pancakes!
