Instructions
Step 1
Devein the prawn and was under running water.
Step 2
Butterfly the prawns and then lay them flat and using the palm of your hand, gently press down on the prawns to make them flat.
Step 3
Add the prawns to a bowl add in the jerk seasoning and massage into the prawns, cover and allow to marinate for at least two hours.
Step 4
Finely dice and chop the red onion, coriander, mango and tomatoes and add to a bowl. Squeeze in half a lime and mix well, cover and refrigerate.
Step 5
Heat a pan and add in the olive oil, add in the prawns and all the marinade and cook for 2 minutes either side. Add more olive oil to the pan and all the prawns to simmer for about 2 minutes—then remove from the heat.
Step 6
Heat another large pan, place a tortilla into the pan with the prawns and coat in the sauce on both sides, put into the heated pan and toast for a minute flip over, add cheese to the tortilla then, a spoonful of salsa and then prawns, now fold the tortilla in half encasing the filling and press down with a spatula, after 30 seconds flip over and press down with the spatula then remove from the pan and repeat with the rest of the tortillas.
Step 7
Add 100ml gravy to the remaining jerk seasoning marinade and bring to a boil, then decant to ramekins. Time to plate, sprinkle with chopped coriander, lick your lips and enjoy.
