Instructions

Step 1
Break up sausage meat into chunks and fry with onion, peppers, courgette and mushrooms until golden.
Step 2
Add garlic and cook until fragrant. Add chopped & cherry tomatoes, and herbs & spices with 200ml water. Add red wine if using.
Step 3
Simmer down until tomatoes have softened and sauce has thickened (approx 20mins) and serve with cooked pasta. Top with handful of rocket if using.
