Ingredients
2 servings

250gcherry tomatoes
a mixture of colours works well

1 handfulfresh basil leaves

1 handfulfresh parsley

1cucumber

15mozzarella pearls
small
Harissa dressing
Instructions
Step 1
Mix all the ingredients for the dressing together with 1 tablespoon water and season.
Step 2
Slice the tomatoes in half and place in a bowl. Tear over the basil. Finely chop the parsley and sprinkle on top.
Step 3
Slice the cucumber in half lengthways and scoop out the seeds with a teaspoon. Cut across into chunks on an angle. Add to the bowl along with the mozzarella. Mix everything together.
Step 4
To pack: Spoon the salad into the lunchboxes. Pack the dressing separately.

- Replace the harissa with one of our pestos or tahini. · - Add an avocado, diced, or a few slices of Parma ham, torn into pieces.
