Ingredients

¼ cupchickpeas
canned, drained and rinsed
70 gramstuna in water
drained
15 gramsred onion
finely chopped
1mini cucumber
diced
75 gramscherry tomatoes
halved
10 gramscapers
optional
5 gramsfresh parsley
chopped
5 gramsDijon mustard
15 gramsfresh lemon juice
5 gramsolive oil
salt-free seasoning
pepper
to taste

Instructions
Step 1
Arrange the spring greens on a plate.
Step 2
To a medium bowl, add the chickpeas, tuna, red onion, cucumber, cherry tomatoes, capers, and parsley. Stir to combine.
Step 3
Using a small bowl, whisk together the Dijon mustard, lemon juice, and olive oil. Season with salt (or salt-free seasoning) and pepper to taste.
Step 4
Pour the dressing over the chickpea-tuna mixture and toss gently to combine. Layer over the plate of greens and enjoy!
