Brown Butter Chewy Oatmeal Cookies

Instructions

Step 1
Preheat oven to 375, line a baking sheet with parchment paper.
Step 2
Mix flour, salt and baking soda in bowl, set aside.
Step 3
Brown the butter until caramel brown, about 3 minutes. Remove from heat and add to a mixing bowl.
Step 4
Add cinnamon to the hot butter, then oil and both sugars. Mix well.
Step 5
Mix in the egg + egg yolk and vanilla once the butter and sugar have cooled down a little. Mix well.
Step 6
Stir in the prepared flour, salt and baking soda. Mix to combine.
Step 7
Stir in the raisins and oats until all combined.
Step 8
Using a cookie scoop, portion cookies using a 2 tablespoon scoop. Gently pat each down so they are not domed on top.
Step 9
Bake for 10 minutes, cookies with be very soft in the center, slightly golden on the outside. Remove from sheet to a cooling rack.
