Step 1
Preheat oven to 350°F

In a small bowl, beat the eggs until frothy

Add water and chickpea flour. Slowly whisk. Add the salt and set aside.

In a large cast iron skillet over high heat, add the olive oil. When oil is hot, add onion. Sautee for 3 to 5 minutes until onion is softened and slightly translucent. Add the mushrooms and sautee for 5 minutes more. Add the turmeric, cumin, salt and pepper, and sautee for 1 minute.
Step 5
Pour the batter over the vegetables and sprinkle with parsley. Place the skillet in the preheated oven and bake for 20 to 25 minutes.
Step 6
Serve warm or at room temperature.
