Step 1
Cook pasta as per packaging instructions.
Step 2
While waiting for pasta to cook, combine tofu, garlic, vinegar, oil, salt and black pepper in a blender or food processor. Blend until smooth, adjusting flavours by adding more garlic, salt or pepper. Set aside.
Step 3
Once pasta is cooked, drain then set aside.
Step 4
Transfer sauce into a pan or skillet and heat on low heat. Combine cooked pasta with the sauce and coat evenly.
Step 5
Stir in cheese, then add spinach. Once spinach has wilted, remove from heat.
Step 6
Serve immediately, topped with red pepper flakes and your choice of cutlet, if desired.
