2cucumbers
large, preferably English or Persian for fewer seeds
2 clovesgarlic
minced
2red chilies
thinly sliced, adjust to taste
1 tablespoonsoy sauce
1 tablespoonrice vinegar
or lime juice
1 teaspoonsugar
palm sugar preferred for authentic flavor
1 teaspoonsesame oil
1 tablespoonvegetable oil
salt
to taste
Fresh cilantro
or parsley, chopped
Toasted sesame seeds

Instructions
Step 1
Wash the cucumbers thoroughly. If using larger cucumbers, you can peel them partially or completely based on your preference.
Step 2
Place each cucumber on a cutting board. Using the side of a heavy knife, rolling pin, or a meat mallet, gently smash each cucumber to slightly break the skin and soften them. Be careful not to completely flatten them; you want to retain some texture.
Step 3
After smashing, cut the cucumbers into bite-sized pieces or diagonally slice them for a more elegant presentation.
Step 4
In a large mixing bowl, combine the minced garlic, sliced red chilies, soy sauce, rice vinegar or lime juice, and sugar. Stir until the sugar dissolves.
Step 5
Add the sesame oil and vegetable oil to the dressing. Mix well to ensure all the flavors meld together.
Step 6
Add the smashed and sliced cucumbers to the bowl with the dressing. Toss gently to ensure the cucumbers are evenly coated.
Step 7
Taste and adjust the seasoning with salt or more soy sauce/vinegar if needed.
Step 8
Let the salad marinate for at least 15-20 minutes to allow the flavors to penetrate the cucumbers. For even better flavor, you can prepare it a few hours in advance and refrigerate.
Step 9
Before serving, give the salad a gentle toss. Transfer it to a serving platter or individual bowls.
Step 10
Garnish with chopped cilantro or parsley, toasted sesame seeds, and sliced green onions for added flavor and presentation.
