Ingredients
10 servings

2Chicken Breasts
large, cut into chunks
Canned pinto beans cans
3, drained
Canned black beans cans
3, drained

1yellow onion
large, diced

1 cupLime juice

2 Tbspminced garlic

1 ½ cupsChicken Broth

1 Tbspchili powder

2 Tbspcumin

2 Tbspparsley seasoning

1 cupheavy cream

2cans diced green chilis
small

1 bagfrozen corn
small

Shredded Colby jack cheese
for serving, optional

Sour cream
for serving, optional

Cilantro
for serving, optional
Tortilla strips
for serving, optional
Instructions
Step 1
Begin with chicken chunks in a large pot with 2 tbsps of olive oil in the bottom on medium heat. Add diced onions, garlic, and all your seasonings. Brown chicken on all sides until fully cooked and onions almost cooked.
Step 2
Start adding in your canned beans and green chili's while stirring consistently.
Step 3
Immediately follow by adding your chicken broth, heavy cream, and lime juice. Keeping the mixture stirred in between ingredients.
Step 4
Bring mixture to a boil while continuing to stir. Once starting to bubble, add bag of frozen corn and stir in, turn down to low and simmer covered for approximately 20 minutes, stirring about every 3-5 minutes.
Step 5
Once it has simmered for a while. Turn off burner and uncover. It will need to cool a while before serving.
Step 6
Serve with a top garnish of all optional ingredients if desired.
