Ingredients
6 servings

chorizo

3 clovesgarlic
minced

1 cupcilantro
diced

1onion
medium, 1/2 inch diced

2 teaspoonscumin

2 teaspooonsgarlic pepper

3carrots
diced

3celery stalks
diced

2russet potatoes
diced

1can fire roasted diced tomatoes

½ tablespoonoregano

¼ teaspoonpepper

2jalapeno pepper
diced, to taste

1zucchini
diced

½ teaspoonsalt

4 cupslow sodium chicken broth

¼ teaspoonpaprika
Instructions
Step 1
If whole chorizo sausages, slice and sauté in a soup pot with 1/2 inch sliced onion 'squares'
If ground chorizo just put into the pot and sauté with the onions, breaking up as it cooks.


Step 2
When the chorizo is browned and onions caramelizing add the chicken broth, garlic, diced carrot, diced celery, 1 can of fire roasted diced tomatoes, fresh cilantro, diced potatoes, diced zucchini and diced jalapeno pepper. Stir to combine.









Step 3
Add the seasonings in: cumin, garlic pepper, oregano, pepper, salt, and paprika. Stir to combine.
Step 4
Bring soup to a boil, stir and reduce to a simmer. "Smell Check" to see if it needs more: oregano or cumin.
Step 5
Simmer for 30-40 minutes. Can simmer for longer with a lid, if needed to build the flavors.
