Instructions

Step 1
If whole chorizo sausages, slice and sauté in a soup pot with 1/2 inch sliced onion 'squares' If ground chorizo just put into the pot and sauté with the onions, breaking up as it cooks.

When the chorizo is browned and onions caramelizing add the chicken broth, garlic, diced carrot, diced celery, 1 can of fire roasted diced tomatoes, fresh cilantro, diced potatoes, diced zucchini and diced jalapeno pepper. Stir to combine.

Step 3
Add the seasonings in: cumin, garlic pepper, oregano, pepper, salt, and paprika. Stir to combine.
Step 4
Bring soup to a boil, stir and reduce to a simmer. "Smell Check" to see if it needs more: oregano or cumin.
Step 5
Simmer for 30-40 minutes. Can simmer for longer with a lid, if needed to build the flavors.
