Instructions
Step 1
Add all ingredients to a small sauce pan and bring to a boil

Reduce to simmer and let it simmer 15-20 mins
Step 3
Remove from heat and blend together all the ingredients. I used an immersion blender, but a regular one will work.
Step 4
Strain the liquid back into the sauce pan. I also added 1-2 tbsp of the thicker remains from the strainer back into the sauce pan.
Step 5
Bring back to a simmer and then serve hot
Step 6
Optional: if adding meat, add it in last and return to a simmer for another 20-30 minutes. Precooked shredded chicken or beef/roast will work well.
