Ingredients

15mlolive oil
1 poundboneless skinless chicken thighs
trimmed and cut into pieces
1 cuponion
large, chopped
3cloves garlic
minced
15mlground cumin
5mlground cinnamon
2.5mlground turmeric
2.5mlground ginger
480mllow-sodium chicken broth
½ cupdried apricots
chopped
411gcan no salt added diced tomatoes
425gcan chickpeas
rinsed and drained
Instructions
Step 1
Heat the olive oil in a large pot over medium-high heat. Add the chicken pieces and cook until browned on all sides.
Step 2
Add the chopped onion and minced garlic to the pot with the chicken and sauté until the onions are translucent.
Step 3
Stir in the cumin, cinnamon, turmeric, and ginger, cooking for about 1 minute until fragrant.
Step 4
Pour in the low-sodium chicken broth, and add the chopped dried apricots and diced tomatoes. Bring to a boil.
Step 5
Reduce the heat to low, cover, and simmer for 30 minutes.
Step 6
Stir in the chickpeas and continue to simmer for an additional 10 minutes.
Step 7
Adjust seasoning with a minimal amount of salt, if necessary, and pepper to taste before serving.
