Instructions

Step 1
Start by chopping the aromatics and placing them in a pot with 1tbsp of neutral oil (I used sunflower seed). After 5 minutes on medium heat, add the broth and once it starts simmering add the coconut milk. Let it all simmer for 10 minutes (donโ€™t boil)
Step 2
Chop the pepper and mushrooms and add them to the soup, and follow that with the lime leaves, lime juice, fish sauce and kaffir leaves (and sugar). Let it all simmer for 20 minutes and serve with some rice and your favourite toppings ๐Ÿœ๐Ÿ™‚โ€โ†”๏ธ
