Instructions

Step 1
In a blender, blend 1/2 of your prepared onion, tomatoes, garlic, salt, and 2 cups of water. Set aside.
Step 2
In a medium sized saucepan heat olive oil on medium. Saute the rest of your prepared onions until softened slightly, about 1 min. Add fideo pasta to the saucepan and toast until golden, about 2 min.
Step 3
Add the blended tomato mixture to the saucepan along with 2 more cups of water and the rest of your ingredients. Bring to a gentle boil and cook until the fideo pasta is softened, about 8 minutes. Serve and enjoy!
