Instructions

Step 1
Heat olive oil in large pan on medium heat.
Step 2
Add sweet mini peppers and onion and cook for 5 minutes or until onion becomes translucent.
Step 3
Stir in garlic and spices; cook for 1 minute.
Step 4
Add tomatoes, tomato paste and water an cook until sauce thickens.
Step 5
Divide suace into 2 portions.
Step 6
In a small pan, bring 1 portion of prepared sauce to a simmer.
Step 7
Using a large spoon, make three small wells in the sauce.
Step 8
Crack an egg into each well, cover and cook eggs for 5 to 8 minues.
Step 9
Garnish with parsely, green onion, feta and crushed red pepper.
Step 10
Add salt and pepper to taste.
Step 11
Repeat for ramining sauce and eggs.
