Ingredients
2 servings
1 Tbspolive oil
1clove garlic
minced
150gmushrooms
sliced
1shallot
sliced
0.5capsicum
any colour, diced
1 x 400gbutter beans
rinsed and drained
Sauce
¼ cuppeanut butter
1 Tbsplime juice
2 Tbspsoy sauce
2 tspsriracha
if desired
salt
to season
black pepper
water
as needed

Instructions
Step 1
Heat oil in a frying pan. Once hot, add in the garlic mushrooms. Fry for a about 5 minutes or until starting to soften.
Step 2
Add in the shallots, and fry for a few minutes. Add in the capsicum and cook for a minute or two.
Step 3
Meanwhile, mix all the sauce ingredients in a small bowl. The consistency should be fairly runny, so add in enough water to this or desired consistency.
Step 4
Add sauce and beans into the frying pan, mixing thoroughly. Leave on the heat for a minute before removing.
Step 5
Serve in a bowl with a slice of bread, peanuts, sesame seeds and chilli (if desired).
