Instructions
Step 1
Heat oil in a frying pan over a medium heat, then add in leeks and garlic. Cook for a few minutes.
Step 2
Add in zucchini, cooking until the veggies begin to soften.
Step 3
Add in peas and season with salt and pepper.
Step 4
Add gnocchi, frying for a couple of minutes until they turn golden brown.
Step 5
Lower the heat and mix in the pesto.
Step 6
Serve in bowls, adding a splash of lemon juice and topping with grated Parmesan.
