Instructions

Step 1
Trim the brisket, removing excess fat and silver skin, leaving about 1/4 inch of fat on the top. This helps to keep the meat moist during smoking.

In a small bowl, mix together the kosher salt, black pepper, garlic powder, onion powder, paprika, and chili powder. Rub this mixture all over the brisket, ensuring it is evenly coated.

Preheat your smoker to 225°F (107°C). Add your choice of wood chips to the smoker box or directly to the coals if using a charcoal smoker.

vPlace the brisket fat-side up on the smoker grate. Insert a meat thermometer into the thickest part of the brisket.

Smoke the brisket until it reaches an internal temperature of 165°F (74°C), which usually takes about 6-8 hours. During this time, maintain a consistent smoker temperature and add wood chips as needed to keep the smoke going.
Step 6
Once the brisket reaches 165°F, remove it from the smoker and wrap it tightly in butcher paper or aluminum foil. Pour the beef broth into the wrap to keep the meat moist.
Step 7
Return the wrapped brisket to the smoker and continue cooking until it reaches an internal temperature of 203°F (95°C), which can take an additional 3-5 hours.
Step 8
Remove the brisket from the smoker and let it rest, still wrapped, in a cooler or warm oven for at least 1 hour. This allows the juices to redistribute throughout the meat, ensuring a tender and juicy brisket.
Step 9
Unwrap the brisket and slice it against the grain into 1/4-inch thick slices. Serve with your favorite barbecue sauce and sides.
