Ingredients

1 lbitalian sausage
1onion
small, diced
3cloves garlic
minced
4 cupschicken broth
1 x 14 ozcan diced tomatoes
1 cupheavy cream
1 ½ cupsshort pasta
elbow, shell, or ditalini
½ cupparmesan cheese grated
1 tspitalian seasoning
salt
to taste
black pepper
2 Tbspolive oil
fresh parsley
chopped, for garnish
red pepper flakes
Optional, for a bit of heat
Instructions
Step 1
Heat olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it up into crumbles, about 5-6 minutes. Remove the sausage and set aside.
Step 2
In the same pot, add diced onions and cook for 3-4 minutes until softened. Add minced garlic and sauté for an additional minute.
Step 3
Pour in the chicken broth and diced tomatoes (with their juices). Stir in the Italian seasoning, salt, and pepper. Bring to a simmer.
Step 4
Add the short pasta and cook until al dente, following package instructions (around 8-10 minutes).
Step 5
Once the pasta is cooked, stir in the heavy cream, Parmesan cheese, and browned sausage. Simmer for another 5 minutes, allowing the flavors to meld.
Step 6
Taste and adjust seasoning as needed. For some spice, add red pepper flakes.
Step 7
Garnish with fresh parsley and extra Parmesan cheese before serving.
